quick lunch series: 10 min lunch

I have over the years always cooked 1 pot pasta dishes, sometimes from left overs, sometimes from scratch. Scrolling through youtube one day, though I came across a recipe that said to soak the pasta, I was really fascinated, as the only time I have soaked pasta in the past was when I cooked lasagne. So check this out…..

This is really straightforward and takes only 10 mins or so to cook. 

So you will need 

1&1/2 cups of macaroni or any pasta of your choice

2 shallots

2 garlic cloves

1 sweet pepper

2 tbsp tomato sauce

10 tbsp of dried mince 

( this mince that has previously already been cooked down,) If you don’t have this, you can substitute with a can of mackerel or kidney beans.

 1 tsp Oregano 

1 tsp Chilli to taste 

2 small Bayleaves, 

1 tsp Black pepper

1 tbsp Worcestershire sauce.

1 cup of kale finely chopped. 

2 baby bell cheese finely chopped or grated. 

So to do this, first of all I soaked the macaroni in cold water, by putting it bowl and covering it with the cold water.  Set aside for  at least 10-15 minutes, you can do this a bit ahead of time should you desire.

Take a pan and grease it, then add the onions and garlic and cook over low heat until the onions are translucent and starting to brown at the edges, then go in with the sweet pepper, stir this for a few minutes, then add the tomato sauce, stir, then add the mince. Stir it all then add about 1/2 cup of water. Mix it all in then bring to the boil. Once builed add the pasta. Mix it all  until all ingredients are evenly spread, then add the kale and cheese. Its done with the kale is. Yum yum …

1 pot, 10 min lunch with Macaroni.
